Middletown Oyster Stew - cooking recipe

Ingredients
    3 qt. oysters, washed and drained
    1 Tbsp. oil
    3 slices salt pork, diced
    2 to 3 c. water or liquid from oysters
    salt and pepper to taste
Preparation
    In frying pan, put oil and diced salt pork; fry slowly, turning constantly until crisp and brown.
    Put into a 3-quart cooking pot.
    Add oysters (there is some juice in the oysters), stirring constantly and gradually add water or juice. Salt and pepper to taste.
    Bring to a slow boil and cook about 15 minutes. Serves 6 to 8.
