Tortellini And Cheese Sauce - cooking recipe

Ingredients
    16 oz. tortellini pasta
    2 Tbsp. butter
    3/4 c. heavy cream
    8 oz. Ricotta cheese
    1 c. shredded Mozzarella cheese
    2 Tbsp. Parmesan cheese
    1/4 tsp. pepper
    1/4 c. Gorgonzola or Blue cheese
    additional Parmesan cheese
Preparation
    Cook tortellini as directed.
    Meanwhile, in 12-inch skillet, melt butter.
    Add cream, Ricotta, Mozzarella, 2 tablespoons Parmesan and pepper.
    Cook 3 to 5 minutes, stirring constantly, until cheeses are melted and blended.
    Drain tortellini; add to skillet with parsley.
    Stir until well mixed.
    Sprinkle with Blue cheese or Gorgonzola and additional Parmesan.
    Serve immediately. Serving on heated platter will help to keep pasta from cooling too quickly.
