Gingered Ambrosia - cooking recipe

Ingredients
    6 large navel oranges
    2 (20 oz.) cans pineapple chunks, drained
    2/3 c. sweetened flaked coconut
    1/4 c. fresh mint leaves, cut into strips
    2 1/2 Tbsp. fresh lime juice
    1 1/2 Tbsp. grated fresh ginger
    fresh mint sprig (garnish)
Preparation
    Peel and section oranges over a bowl, reserving juice. Combine orange sections, juice and remaining ingredients; toss gently. Cover and chill until ready to serve. Garnish, if desired.
