Bacon-Stuffed Potatoes - cooking recipe

Ingredients
    4 large baking potatoes
    vegetable oil
    1/2 c. chopped shallots
    2 Tbsp. melted butter
    1 c. sour cream
    1/2 c. grated Parmesan cheese (fresh)
    1 tsp. salt
    1/2 tsp. pepper
    8 slices bacon, cooked and crumbled
Preparation
    Rub clean potatoes with oil and bake at 400\u00b0 for 1 hour or until soft.
    Allow potatoes to cool to touch.
    Slice away skin from top of each potato.
    Scoop out pulp, leaving shells intact.
    Saute shallots in butter until tender.
    Add shallots and other ingredients to potato pulp and mix well.
    Stuff shells with mixture.
    Place potatoes in 9-inch square baking pan and bake at 350\u00b0 for 15 minutes.
