Armadillo Eggs - cooking recipe

Ingredients
    1 lb. sausage
    1/2 lb. sharp Cheddar cheese
    1 1/2 c. Bisquick
    25 jalapeno peppers
    1/2 lb. Monterey Jack cheese
    2 eggs, beaten
    1 pkg. Shake 'n Bake (pork), mixed with bread crumbs
Preparation
    Clean jalapeno peppers; remove seeds and drain.
    Mix sausage, Cheddar cheese and Bisquick.
    Stuff peppers with small sliver of Monterey Jack cheese; wrap with sausage mix.
    Dip in beaten eggs; roll in Shake 'n Bake mixture.
    Bake at 300\u00b0 for 30 to 35 minutes. Can be frozen and used later, also.
    Yields 25 peppers. Delicious.
