Creamy Potatoes - cooking recipe

Ingredients

4 medium potatoes, peeled and cubed
1/3 c. chopped onion
1 (1 oz.) pkg. Ranch dressing mix
4 Tbsp. fat-free sour cream
2 c. skim milk
1/2 tsp. parsley

Preparation

Precook potatoes in microwave until slightly tender.
Spray skillet with vegetable spray.
Brown onion and potatoes.
When golden brown, add the rest of the ingredients and simmer until it thickens.
Makes 6 servings.
