Chicken Scampi(Low-Fat) - cooking recipe

Ingredients
    4 breast halves (skinless)
    2 Tbsp. olive oil
    1 c. chopped onions
    1 clove garlic, chopped
    1/2 c. white wine or chicken broth
    1/2 tsp. salt
    1/4 tsp. pepper
    2 c. chopped fresh tomatoes
    1 c. sliced fresh mushrooms
    2 Tbsp. parsley
Preparation
    Heat oil in Dutch oven.
    Add chicken.
    Brown lightly on each side (about 10 minutes).
    Remove chicken and sprinkle with salt and pepper.
    Add onion and garlic. Stir-fry until golden brown (about 5 minutes).
    Add tomatoes, mushroom and parsley.
    Return chicken to pan.
    Spoon vegetables over meat.
    Reduce heat to low and cook 10 minutes more, until sauce is thick and fork can be inserted with ease.
    Serve over angel hair pasta.
