Chicken Or Turkey Enchiladas - cooking recipe

1 c. chopped onion
2 Tbsp. butter
4 oz. can green chili peppers, drained
3 Tbsp. butter
1 tsp. ground coriander
2 1/2 c. chicken broth
1 1/2 c. shredded Monterey Jack cheese
1 dozen burrito flour tortillas
1/2 c. chopped green pepper
2 c. cooked, shredded turkey or chicken
1/4 c. flour
3/4 tsp. salt
1 c. sour cream
Preparation

Cook chicken and debone.
Save chicken broth.
In large saucepan, saute onion, green pepper and 2 tablespoons butter.
Add chopped chicken and green chilies and set mixture aside.
In large saucepan, combine 3 tablespoons butter, flour, coriander, salt and chicken broth.
Stir until thickened.
Add sour cream and 1/2 cup of cheese.
Combine 1/2 cup of sauce mixture into the chicken mixture.
Roll each tortilla with chicken mixture and 1 tablespoon of sauce and place in large baking dish.
When rolling of tortillas is complete, sprinkle remaining cheese and then remaining sauce on top.
Bake at 350\u00b0 for 25 minutes.
