Split Pea Soup - cooking recipe

Ingredients
    2 c. split peas
    1 medium-size meaty beef bone
    10 c. cold water
    1/2 c. onions, chopped
    1 c. celery, diced
    2 c. carrots, diced fine
    2 Tbsp. oil
    salt to taste
    freshly ground black pepper to taste
    1 Tbsp. chopped parsley
Preparation
    Into a 4-quart container, with a heavy bottom, put split peas, beef bone and cold water.
    Place container over medium heat and bring to boiling point.
    Reduce heat, cover and simmer.
