Ingredients

1 fresh coconut, grate enough to make 2 c.
2 eggs
1 c. honey and molasses, mixed, or 1 1/2 c. brown sugar
1/2 tsp. vanilla
1/4 tsp. salt
1/2 c. wheat germ or chopped nuts
6 Tbsp. whole wheat flour
Preparation

Break eggs into a large bowl; beat until foamy. Beat in honey, molasses combination or brown sugar; add vanilla and salt.
Stir in grated coconut, nuts or wheat germ.
Add whole wheat flour and stir until mixed well.
Grease a 9-inch square pan.
Pour in batter.
Bake at 350\u00b0 for 30 minutes.
