Stuffed Sole - cooking recipe

Ingredients
    2 lb. sole fillet
    2 oz. butter
    1/3 c. carrots, shredded
    8 slices white bread
    1/2 c. pimentos, minced
    2 Tbsp. parsley
    1/4 c. chicken broth
    salt and pepper
Preparation
    Cut fillet into 6 pieces. Mix melted butter with remaining ingredients. Divide between fillets and roll up.
    Secure with toothpick.
    Put into baking dish. Brush with melted butter.
    Bake at 375\u00b0 for 30 minutes.
