Poached Chicken In Basil Wine - cooking recipe

Ingredients
    1 (3 to 3 1/2 lb.) broiler/fryer chicken
    1 carrot, chopped
    1 onion, chopped
    1 Tbsp. butter
    1 bay leaf
    1 c. chicken stock
    1 c. dry white wine
    1/2 tsp. basil (or can use tarragon if preferred)
    salt and pepper
Preparation
    Wash and dry chicken; saute carrot and onion in butter; put in crock-pot.
    Brown fryer in fry pan and put in crock.
    Add wine, leaf, stock, basil, salt and pepper.
    Cover and cook on low 6 to 8 hours.
    Remove chicken, keep warm, pour juice in saucepan.
    Skim fat, boil down to 1 cup.
