Sweet Potato Muffins - cooking recipe

Ingredients
    3/4 c. hot water
    3/4 c. seedless raisins
    1 c. mashed sweet potato
    3 Tbsp. corn oil
    3 Tbsp. honey
    1 c. corn meal
    2 Tbsp. baking powder
    1 c. rolled oats
Preparation
    Add hot water to raisins; cool.
    Add mashed potatoes, oil and honey.
    Mix with corn meal, baking powder and oats.
    Fill greased muffin tin 3/4 full.
    Bake at 375\u00b0 for 30 minutes.
    Makes 12 muffins.
