To-Po Pork Chops - cooking recipe

Ingredients
    6 pork chops
    1/2 tsp. salt
    1/2 tsp. pepper
    1 (1 lb.) can tomatoes
    1/4 c. water
    1 tsp. salt
    1/8 tsp. pepper
    4 medium potatoes, pared and cut into 1/8-inch slices
    1 medium onion, sliced
Preparation
    Trim excess fat from chops.
    Lightly grease heavy skillet with fat from one chop.
    Brown chops on both sides.
    Season each side with 1/4 teaspoon salt and 1/8 teaspoon pepper.
    Remove chops; drain fat from skillet.
    Add tomatoes to skillet; break up with fork.
    Mix in water, 1 teaspoon salt, the basil and 1/8 teaspoon pepper.
    Layer potatoes in tomato mixture.
    Arrange onions over potatoes.
    Top with chops.
    Cover tightly.
    Simmer 45 minutes or until potatoes are tender and chops are done.
    Makes 6 servings.
