Kugelis(Serves 20) - cooking recipe

Ingredients
    10 lb. potatoes
    1 doz. eggs
    1 can evaporated milk
    1 lb. bacon
    4 large onions
    1/2 qt. milk
    1/4 lb. butter or margarine
    salt and pepper to taste
Preparation
    Chop onions and bacon fine.
    Start frying bacon; when bacon is partially cooked, add all the onions.
    Continue cooking until the onions are transparent.
    Add one stick of butter or margarine.
    Set aside.
    Peel potatoes and set in cold water until ready to grate. Grate potatoes on fine grater, occasionally adding evaporated milk. Use entire can.
    Helps prevent browning.
    Add bacon, onions and butter to grated potatoes.
    Mix thoroughly.
    Beat eggs and add to potatoes.
    Mix; add enough milk to reach the consistency of pancake batter.
    Grease two 9 x 12-inch pans.
    Pour in mixture.
    Bake, uncovered, for 1 to 1 1/2 hours.
    Cut into squares.
