Johnny Cake - cooking recipe

Ingredients
    1 c. white cornmeal (preferably stone-ground)
    1/2 tsp. salt
    1 c. boiling water
    3 to 4 Tbsp. milk or cream
    1 tsp. sugar or molasses (optional)
Preparation
    Mix all ingredients to consistency of mashed potatoes, adding more liquid if necessary.
    Drop by spoonfuls onto hot greased griddle to make cakes 1/2-inch thick by 2 1/2-inches across.
    Fry 6 to 8 minutes on each side until there is a brown crunch crust and the inside is done.
    Makes 12.
    Serve with butter or maple syrup or both.
