Cheesy Potato Casserole - cooking recipe

Ingredients
    7 medium potatoes (2 lb.)
    1/4 c. margarine, melted
    1 small onion
    1 tsp. salt
    1/4 tsp. pepper
    1 (8 oz.) cream cheese
    1 can cream of chicken soup
    2 c. Cheddar cheese
    3 Tbsp. margarine, melted
    1 1/2 c. herb stuffing mix
Preparation
    Peel boiled potatoes and cut into small pieces; set aside. Combine next 6 ingredients in large bowl.
    Gently stir in potatoes and cheese.
    Spoon into a greased 13 x 9 x 2-inch baking dish. Combine margarine and stuffing mix, then sprinkle over mixture. Bake, uncovered, at 350\u00b0 for 25 minutes or until done.
