Mississippi River Catfish Gumbo(Serves 4 To 6) - cooking recipe
Ingredients

1/4 c. vegetable oil
1/2 c. chopped green bell pepper
1/2 c. chopped onions
1/2 c. chopped celery
2 cloves garlic, minced
1 tsp. brown sugar
2 c. fish stock
4 to 5 firm ripe tomatoes, cut in wedges or 14 1/2 oz. can tomato wedges
2 c. sliced, fresh okra
2 tsp. salt
1/4 tsp. thyme
1 Tbsp. lemon juice
1 bay leaf
Tabasco sauce to taste
1 lb. catfish fillets, cut in 1-inch pieces
2 tsp. file powder
3 c. cooked rice
