Peak-A-Boo Cookies - cooking recipe

Ingredients
    2 1/2 c. sifted flour
    1 tsp. soda
    1 tsp. salt
    1 c. brown sugar
    1 c. shortening
    1/2 c. water
    2 1/2 c. oats
    1/2 c. jelly, jam or preserves of any kind
Preparation
    Sift together the flour, soda and salt into bowl.
    Add brown sugar, shortening (softened) and water.
    Beat until smooth, about 2 minutes.
    Fold in oats.
    Sprinkle a board with powdered sugar. Roll dough very thin.
    Cut with cutter.
    Cut a design in half with hole in it.
    Place cookies on baking sheet.
    Top with jelly and cover with a cookie that has a hole in it on top of jelly, lightly pressing edges together.
    Bake 10 to 12 minutes at 350\u00b0.
    Makes 3 1/2 dozen.
