Candied Sweet Potatoes With Ginger - cooking recipe

Ingredients
    2 lb. sweet potatoes, cooked and cooled
    1/2 c. dark raisins
    1 tsp. chopped ginger or 1/2 tsp. powdered ginger
    2 Tbsp. margarine
    1/2 c. honey
    1/2 c. apples or pineapple juice
Preparation
    Preheat oven to 400\u00b0.
    Cut potatoes crosswise into 1/2-inch thick slices.
    Place in 1 1/2-quart baking dish; top with raisins, ginger and margarine.
    In a saucepan, combine honey, apples or pineapple juice.
    Heat over low heat 2 to 3 minutes, stirring to blend well.
    Pour honey mixture over potatoes and bake 20 minutes. Spoon liquid over potatoes.
    Serves 6.
