Dad'S Stuffed Peppers - cooking recipe

Ingredients
    8 to 10 green peppers
    1 large onion, diced
    several stalks of celery, diced
    2 lb. good ground beef
    1/2 lb. sage sausage
    1/2 tsp. rubbed sage
    1 1/2 to 2 c. crushed saltines
    3 medium eggs
    pinch of chili pepper
    pinch of black pepper
    heavy pinch of salt
    hot pepper and other spices (optional)
    canned tomatoes
    spaghetti sauce
Preparation
    Clean peppers and cut off tops.
    (Save tops, minus stems, for filling.)
    Combine celery, onion, and diced pepper top pieces and saute in a skillet.
