Oriental Chicken And Peanuts - cooking recipe

Ingredients
    1/2 c. peanuts
    2 stalks celery, chopped
    1 small yellow onion, chopped
    2 cloves garlic, crushed
    1 lb. chicken breasts, chopped into 1 inch strips
    1 Tbsp. peanut oil
    2 c. chicken broth
    1 tsp. cornstarch
    2 Tbsp. low-salt soy sauce
Preparation
    Combine 1 3/4 cups broth, cornstarch and soy sauce and set aside.
    Saute onion and garlic in oil, either in a wok or saucepan for 3 to 4 minutes.
    Add 1/4 cup chicken broth.
    Add chicken and stir-fry until chicken is cooked through.
    (You may need to add a little more chicken broth if mixture is dry.)
    Add celery and peanuts and broth/cornstarch/soy sauce mixture.
    Cover and allow to simmer until thickens, about 3 minutes.
    Serve over rice or noodles.
