Herbed Baked Halibut - cooking recipe

Ingredients
    4 (5 oz.) fresh halibut or scrod fillets
    juice of 1/2 lemon or lime
    1 tsp. crushed Italian herb seasoning
    freshly ground pepper
    1 (8 oz.) can salt-free tomato sauce
    1 small onion, chopped
    1/2 c. chopped celery
    1 green pepper, chopped
    2 ripe plum tomatoes, chopped
    6 fresh mushrooms, sliced
Preparation
    Sprinkle fillets with lemon juice, herb seasoning and pepper. Marinate 10 to 20 minutes.
    Pour a bit of tomato sauce in the bottom of a small, shallow baking dish.
    Lay fish on top of sauce and bake in upper third of a preheated 375\u00b0 oven for 10 minutes. Layer top of fish with onion, celery, green pepper, tomatoes and mushrooms.
    Pour remaining tomato sauce over vegetables and bake at 375\u00b0 for 20 to 25 minutes or until fish flakes.
    If you like, the fish may be prepared and served directly in individual baking dishes.
    Yield:
    4 servings.
