Chicken Breasts With Shiitake Mushrooms - cooking recipe

1/3 c. shallots, chopped
1 1/2 c. chicken broth
1 Tbsp. cornstarch
2 Tbsp. lemon juice
lemon zest (for garnish)
1 Tbsp. parsley, chopped (for garnish)
Preparation

Arrange chicken breasts over the bottom of a glass Pyrex dish. Mix the olive oil, lemon juice, mustard, salt and pepper in a food processor fitted with a steel blade.
Add the onions, garlic and brown sugar; puree until smooth.
Pour over the chicken. Cover and marinate overnight in the refrigerator.
Turn chicken over in the morning so both sides marinate.
