Artichoke And Pasta Salad With Tomato Sauce - cooking recipe
Ingredients

8 oz. ziti
1 (6 oz.) jar marinated artichoke hearts
1/2 c. chopped onions
2 cloves garlic, minced
2 c. peeled and diced tomatoes or 1 (16 oz.) can Italian plum tomatoes, drained and chopped
1 bay leaf
1 tsp. salt
pepper to taste
1/2 tsp. oregano, crushed
1/4 tsp. marjoram, crushed
1/2 tsp. basil, crushed or 1 Tbsp. fresh, chopped
2 Tbsp. chopped parsley
1/4 c. olive oil
1/2 c. grated Parmesan cheese
Preparation

Cook pasta until al dente and drain.
Transfer to a serving bowl and toss with 1/4 cup olive oil.
Drain marinade from the artichokes into a 10-inch skillet.
Set the artichokes aside.
Add the garlic and onions to the liquid and simmer until the onions become translucent.
Add the tomatoes, bay leaf, herbs and salt. Cover and simmer 10 minutes.
Uncover and cook another 10 minutes. Cut the artichokes in half and add to the tomato sauce.
Heat for a few minutes.
Remove the bay leaf and stir in the parsley.
Cool to room temperature and pour over the pasta.
Toss until well blended. Pass the Parmesan cheese separately.
Serves 6.
