Pork Chops Creole - cooking recipe

Ingredients
    6 boned pork chops
    1 c. chopped celery
    1 c. chopped green pepper
    1 qt. stewed tomatoes
    1 clove garlic, minced
    1/4 tsp. salt
    1/4 tsp. pepper
    1/4 tsp. basil
    1/4 tsp. thyme
    1/2 c. chopped onion
    2 Tbsp. margarine
    4 c. cooked rice
Preparation
    Cut pork chops into 1-inch pieces; brown in a large skillet with 1 tablespoon oil.
    Remove from pan.
    In same skillet, saute onion, pepper and celery until they change color.
    Add pork, spices and tomatoes.
    Cover and simmer for approximately 1 hour. Serve on a bed of rice.
    Serves approximately 6 people.
