Sweet Potato Souffle - cooking recipe

Ingredients
    6 medium size sweet potatoes
    1/4 c. butter or margarine
    1/2 c. brown sugar
    1/2 c. orange juice or more if needed
    1 Tbsp. grated orange rind
    10 to 12 marshmallows
Preparation
    Wash and boil potatoes in salted water until soft or bake in oven until done.
    Peel and mash.
    Add butter, sugar, juice and rind to hot potatoes.
    Beat until light (as creamed potatoes). Preheat oven to 350\u00b0.
    Place in 2-quart casserole and bake 20 minutes.
    Remove from oven and cover with a topping of marshmallows.
    Put back in oven for a few minutes to brown toppings.
    Serves 8.
