Baked Potato Casserole - cooking recipe
Ingredients

8 cooked, peeled and diced white all-purpose potatoes
1 lb. Cheddar cheese, sliced in strips
1 c. mayonnaise (real mayo)
3/4 c. chopped onion
salt and pepper to taste
1/2 to 3/4 lb. partially cooked bacon, crumbled (dab off grease)
1/4 c. sliced stuffed olives (optional)
Preparation

Combine first 4 ingredients. Place in 9 x 13 (greased lightly) pan. Top with bacon and olives. Bake 1 hour at 350\u00b0. Can be made a day ahead. Can add additional cheese, too.
