New Potatoes With Lemon Butter - cooking recipe

Ingredients
    3 lb. small new potatoes
    boiling water
    salt
    1/2 c. butter or margarine
    3 Tbsp. lemon juice
    2 Tbsp. finely snipped chives, parsley or mint
Preparation
    Scrub potatoes.
    Pare a strip of skin, about 1/2-inch wide, around center of each potato.
    Place potatoes in medium saucepan. Add boiling water to measure 2 inches and 1/2 teaspoon salt. Bring to boiling; boil gently, covered, for 20 minutes or until tender.
    Drain.
    Return to heat for several minutes to dry out. Melt butter in a small saucepan.
    Stir in lemon juice, snipped chives and 1/2 teaspoon salt.
    Pour over potatoes, turning to coat well.
    Turn into serving dish.
    Makes 8 servings.
