Pork Chop Onion Rice Bake - cooking recipe

6 thick pork chops
2 Tbsp. fat drippings
1 c. uncooked Minute rice
3/4 pkg. onion soup mix
1 c. mushroom soup
2 Tbsp. diced pimento
hot water
Preparation

Brown chops in fat.
Spread rice in bottom of rectangular baking dish (13 x 9 x 2-inch).
Reserve part of seasoning from onion soup mix and sprinkle remaining seasoning and bits of onion over rice.
Add enough hot water to mushroom soup to make 3 cups liquid.
Place pimentos over rice, then pour in liquid.
Arrange brown chops on top and sprinkle small amount of onion soup mixture.
Cover tightly with foil and bake at 350\u00b0 for 1 hour. Remove foil and bake 10 minutes longer.
