"Make Ahead" Mashed Potatoes - cooking recipe
Ingredients

3 lb. potatoes, peeled, cooked and hot
1 (8 oz.) pkg. cream cheese, softened (use low-fat)
1/2 c. low-fat or nonfat sour cream
1/4 c. butter or margarine
1/2 c. skim milk
2 eggs or 2 egg whites and 1 egg, lightly beaten
1/4 c. finely chopped onions (optional)
1 tsp. salt
dash of pepper
Preparation

Mash potatoes; add cream cheese in small pieces and then butter.
Beat well and mix in sour cream.
Add eggs and onion to milk and then add to potatoes with seasonings.
Place in greased or \"Pammed\" 9-inch casserole and refrigerate if not using immediately. Bake in preheated 350\u00b0 oven for 45 minutes until lightly browned. Serves 8 to 12.
