Golden Harvest Muffins - cooking recipe
Ingredients

2 c. whole wheat flour
2 c. all-purpose flour
1 c. coarsely chopped walnuts or pecans
1 c. raisins or dates
1 c. grated coconut
1 c. cooking oil
1 c. milk
4 c. grated, peeled apples
1 c. grated carrot
2 c. sugar
4 tsp. baking soda
1 tsp. salt
4 tsp. cinnamon
1/2 tsp. ground cloves
4 eggs, slightly beaten
2 Tbsp. vanilla
Preparation

Preheat oven to 350\u00b0.
Grease or place paper liners in 36 muffin cups.
Measure dry ingredients into very large mixing bowl; stir until well blended.
Mix oil, milk, eggs and vanilla until well blended.
Add to dry ingredients, along with apples, carrots, raisins, nuts and coconut.
Stir just until thoroughly blended. Portion into muffin tins, using 1/4 cup (number 16 scoop) each. Bake for 20 to 25 minutes, or until center of muffin springs back. Makes 36 muffins.
These muffins freeze well and reheat beautifully in the microwave.
