Broccoli Bricks - cooking recipe

Ingredients
    3 eggs
    1 box Jiffy cornbread mix
    1 stick oleo, melted
    1 (10 oz.) Cheddar cheese, grated
    1 (10 oz.) box chopped broccoli, thawed and drained
    1 large onion, chopped
    3 Tbsp. hot peppers, chopped
Preparation
    Peel eggplant and cut the same as French fried potatoes.
    Soak in salt water for 1 hour.
    Drain.
    Pat dry with paper towels.
    Dip in beaten egg and then in cracker crumbs.
    Place on platter and refrigerate while oil heats up.
    Drop into oil, cook until golden brown and drain on paper towels.
    Sprinkle with salt.
