Fried Cheese - cooking recipe

Ingredients
    Kefalotyri or Kasseri cheese, sliced lengthwise in 1/4-inch thick wedges (about 1 lb. for 4 people)
    2 egg yolks, mixed with 2 Tbsp. water
    flour
    olive oil
    2 lemons, cut in quarters
Preparation
    Dip cheese slices into egg yolk mixture, then into flour, coating each side evenly.
    Shake off excess flour.
    In a 10-inch skillet, heat a 1/4-inch layer of olive oil.
    When the oil begins to smoke, add the cheese.
    Fry first on one side, then the other. Remove from skillet; squeeze lemon juice on each slice.
    Serve immediately.
    Allow 2 slices for each person.
