Phyl'S Sweet Potato Muffins - cooking recipe

Ingredients
    3 c. self-rising flour
    2 c. sugar
    1 1/2 tsp. cinnamon
    2 eggs
    1 1/2 tsp. vanilla
    1 1/2 c. vegetable oil
    2 c. sweet potatoes
    1 c. chopped pecans
    1 c. raisins (optional)
Preparation
    Cook and mash sweet potatoes.
    Mix flour, sugar and cinnamon together.
    Stir well.
    Add oil and eggs; stir in sweet potatoes, raisins, chopped nuts and vanilla.\tLightly grease muffin pans, filling about 1/2 full.
    Bake approximately 30 minutes for regular size muffins or 12 to 15 minutes for mini-muffin pans at 375\u00b0.
    Do not overbake.
