Coconut Cream Pie - cooking recipe
Ingredients

1 c. sugar
1/4 tsp. salt
4 eggs
1 1/2 tsp. vanilla
meringue for pie
1/2 c. flour or 1/4 c. cornstarch
3 c. milk
3 Tbsp. butter or margarine
1 (9-inch) baked pastry shell
1 c. flaked coconut
Preparation

For filling:
In a large saucepan, combine sugar, flour or cornstarch and salt.
Gradually stir in milk.
Cook and stir over medium heat until thickened and bubbly.
Reduce heat; cook and stir 2 minutes more.
Remove from heat.
Separate egg yolks from whites; set whites aside for meringue.
Beat egg yolks slightly. Gradually stir 1 cup of hot mixture into yolks.
Return egg mixture to saucepan; bring to a gentle boil.
Cook and stir 2 minutes.
Remove from heat and stir in butter, vanilla and coconut.
Pour hot filling into baked shell.
Spread meringue over hot filling.
Bake in a 350\u00b0 oven for 12 to 15 minutes.
Serves 8.
