Watercress Soup - cooking recipe

Ingredients
    1 lb. potatoes, peeled and quartered
    1 c. water
    2 bunches watercress, washed and dried
    1 Tbsp. minced onion
    2 to 3 c. chicken broth
    1 c. whipping cream or half and half
    1/2 stick butter
    salt and pepper to taste
    hot pepper sauce to taste
Preparation
    Cook potatoes in salted water for 25 minutes.
    Drain and put aside.
    Peel leaves off of the watercress.
    Cook in a pan of 2 cups of water for 8 to 10 minutes on medium to low heat.
    Drain well.
