Spicy Pasta Pie - cooking recipe

Ingredients
    1 c. dried tomatoes
    1 medium onion, chopped
    1/2 c. green onions, diced
    1 c. sliced mushrooms
    1/4 c. each: green and sweet pepper
    3/4 c. spaghetti sauce
    3 oz. Mozzarella cheese, shredded
    3 oz. grated Parmesan
    2 eggs
    1 Tbsp. margarine, melted
    3 c. spaghetti, cooked
    1 c. Ricotta cheese (skim)
    2 Tbsp. chopped parsley
Preparation
    Preheat oven to 350\u00b0.
    Grease 9-inch pie plate or 13 x 9 x 2-inch rectangular baking pan; set aside.
    In 10-inch skillet over medium flame, cook tomatoes, onions, mushrooms and peppers.
    Stir in spaghetti sauce; set aside.
    In large bowl, combine 1/4 cup of Parmesan cheese, 1 egg and margarine.
    Add hot spaghetti; toss to mix well.
    Spread spaghetti mixture on bottom and up side of prepared pie plate, making 1/2-inch rim.
    In small bowl, combine Ricotta, parsley, remaining egg and remaining 1/4 cup Parmesan cheese.
    Spread mixture over bottom of crust.
    Top with vegetable mixture.
    Bake 30 minutes.
    Sprinkle with Mozzarella cheese.
    Bake 5 minutes more or until cheese melts.
    Let stand 5 minutes.
    Cut into wedges.
