Ruth'S Zucchini Bread - cooking recipe

3 c. flour
3 c. unpeeled zucchini, grated
2 c. sugar
1 c. coconut
1/2 c. chopped nuts
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
2 tsp. vanilla
1 c. oil
3 eggs
Preparation

Put flour, zucchini, sugar, coconut and nuts in a large bowl and mix.
Add baking soda, baking powder and salt, and then add vanilla, oil and eggs.
Mix all together very well.
Put in two greased 5 1/2 x 9 1/2-inch loaf pans, filling each about half full.
Bake at 325\u00b0 for 45 minutes to 1 hour.
