Scalloped Eggplant - cooking recipe
Ingredients

1 eggplant, peeled and diced into medium chunks
1 chopped onion
1/2 c. milk
4 Tbsp. butter or oleo
3/4 c. cracker crumbs
Preparation

Cook diced eggplant in some water until fork-tender.
Drain water.
Saute onion in 1 tablespoon butter or oleo until nearly done.
Add 3 more tablespoons of the butter.
Add cracker crumbs and mix well.
