Rhubarb Nut Bread - cooking recipe
Ingredients

1 1/2 c. brown sugar
2/3 c. vegetable oil
1 egg
1 tsp. baking soda
1 tsp. vanilla
1 c. buttermilk
2 3/4 c. flour, spooned into cup
1 1/2 c. chopped rhubarb
1/2 c. chopped walnuts
1 1/2 Tbsp. butter (room temperature)
1/2 c. sugar
Preparation

Beat together (in a large bowl) brown sugar, egg and oil until creamy.
Mix in soda, vanilla and milk. Add flour, rhubarb and nuts.
Pour into 2 greased and floured loaf pans (8 x 4 1/2-inch). Dot tops with butter and sprinkle with sugar. Bake at 325\u00b0 for 1 hour until golden.
