Rice, Ham And Pineapple Skillet Dinner - cooking recipe

Ingredients
    3 Tbsp. oil
    1 small onion, minced
    1 small green pepper, diced
    1 c. rice
    1 (14 oz.) can beef broth
    1 c. diced, cooked ham
    1 (8 oz.) can pineapple chunks, drained
    soy sauce
Preparation
    Heat oil in skillet; add onion, green pepper and rice and saute over medium heat until golden, stirring constantly.
    Stir in broth and bring to a boil.
    Reduced heat, cover and simmer for 15 minutes or until rice is tender and liquid is almost absorbed.
    Fold in ham and pineapple; simmer 5 more minutes.
    Serve with soy sauce.
    Makes 4 servings.
