Ingredients

6 c. rhubarb, diced
1 large or 2 small pkg. sugar-free Jell-O
5 Tbsp. margarine
16 sq. graham crackers, crushed
1 Tbsp. fructose
2 pkg. vanilla sugar-free pudding
4 c. milk
Preparation

Cook rhubarb in microwave (covered) for 6 minutes on High. Stir and continue to cook 6 to 8 minutes, until tender.
Stir in the Jell-O; cool.
