Chicken A La Jill - cooking recipe
Ingredients

4 large boneless chicken breast halves
1/2 tsp. salt
2 Tbsp. olive oil
3 Tbsp. chopped green onions
3 Tbsp. chopped parsley
1/4 c. chicken broth
1/4 tsp. black pepper
2 Tbsp. butter
juice of 1/2 lemon
2 Tbsp. Dijon mustard
Preparation

Place chicken breasts between sheets of waxed paper and pound slightly.
Sprinkle with salt and pepper.
Heat 1 tablespoon each of oil and butter in skillet.
Cook chicken over high heat for 4 minutes on each side.
Transfer to warm serving platter.
Add green onions, lemon juice, parsley and mustard to pan.
Cook 15 seconds, stirring constantly.
Whisk in broth and stir until sauce is smooth.
Add remaining butter and oil.
Pour sauce over chicken and serve immediately.
