Hoppin John - cooking recipe

Ingredients
    1/2 lb. black-eyed peas
    2 tsp. salt
    1 c. rice
    1/4 tsp. baking soda
    1/4 lb. cut up meat (bacon, side meat, jowl, etc.)
Preparation
    Soak peas overnight, drain, rinse and put in kettle.
    Cover with boiling water.
    Add the soda and bring to a boil.
    Drain and rinse again.
    Now, put in fresh water and boil, allowing a quart and a half water; add the salt and meat.
    Cook just at boiling point for 4 hours.
    Now, add the rice and boil 45 minutes longer.
