Eggplant With Crusty Coating - cooking recipe

Ingredients
    1 eggplant
    2 eggs
    1/4 c. breadcrumbs
    1 tsp. Italian seasoning
    1/4 c. grated Parmesan cheese
    1 tsp. oil
Preparation
    Slice eggplant into 1/2-inch slices.
    Dip into lightly beaten eggs.
    Drain and dip into coating made with the breadcrumbs, Italian seasoning and Parmesan cheese, mixed.
    Oil the bottom of a shallow baking pan.
    Place eggplant in it.
    Spray the top with cooking spray.
    Bake at 425\u00b0 for 20 to 30 minutes.
    Turn once.
