Zucchini Relish - cooking recipe

Ingredients
    12 c. ground zucchini
    5 Tbsp. salt
    4 c. ground onions
    2 1/2 c. vinegar
    1 Tbsp. dry mustard
    1 1/2 tsp. celery seed
    1/2 tsp. black pepper
    6 c. sugar
    3/4 tsp. turmeric
    1 green pepper
    1 red pepper
Preparation
    Let zucchini, salt and onions set overnight.
    Rinse off and squeeze excess water out.
    Add remaining ingredients.
    Let everything cook for 30 minutes.
    Do not overcook.
    Spoon into hot jars and let seal.
    Makes 7 pints.
