Sweet And Sour Zucchini - cooking recipe

Ingredients
    6 zucchini, medium size
    1/2 c. oil
    3 Tbsp. wine vinegar
    1 Tbsp. sugar
    1 Tbsp. sweet basil, chopped
    salt and pepper to taste
Preparation
    Wash and scrape zucchini lightly.
    Cut into lengthwise slices, about 3/8-inch thick. Fry in oil about 3 minutes on each side or until slightly brown.
    Sprinkle with salt and pepper.
    Remove zucchini from frying pan and place in a deep dish.
    Mix throughly sugar and vinegar; add to remaining oil in frying pan.
    Boil slowly for 2 minutes.
    Pour over the zucchini.
    Sprinkle with the chopped basil.
    Serve hot or cold.
