Grandma K'S Chicken Meshi - cooking recipe

Ingredients
    1/2 to 1 lb. boneless chicken breast, cut into small pieces
    6 to 7 dried shiitake mushrooms, soaked in hot water to soften
    1 can bamboo shoots, sliced thinly into small pieces
    3/4 c. shoyu
    3/4 c. mushroom water (from the shiitake mushrooms)
    1/2 c. sugar (to taste)
    4 to 5 c. cooked rice
    1 Tbsp. oil (for frying)
Preparation
    Saute chicken in oil.
    Add thinly sliced mushrooms, bamboo shoots and the rest of the ingredients except the rice.
    Bring to a boil, making sure there is still sauce remaining.
    Mix with rice in large bowl.
