Watermelon Pickles - cooking recipe
Ingredients

1 medium size watermelon
7 c. sugar
1 pt. vinegar
1/2 tsp. oil of cloves
1/2 tsp. oil of cinnamon
Preparation

Cut melon in 1-inch slices.
Remove all green skin.
Remove all red part, leave only pale pink.
Cut strips into 1/2-inch pieces.
Pour boiling water over pieces.
Let stand overnight. Then drain and cover with fresh water.
Cook until barely tender. Make a syrup of remaining ingredients and bring to a boil.
Pour over melon strips and let stand overnight.
Next day, drain again. Reheat drained syrup and pour over melon again.
Let stand another night.
On third morning, drain off syrup.
Pack in sterilized jars, reheat syrup again.
Pour over melon in jars and seal.
